RECIPE: Tom Halden's tortellini soup
(From Tom's family friend, Julie Spies)
3 tablespoons olive oil
1 clove garlic, minced
3 stalks celery, chopped
3 carrots, chopped
1/4 onion, chopped
5 oz frozen spinach
2 cans cream of chicken soup
2 cans water
32 oz. chicken broth/stock
1 family size package cheese tortellini
Put oil in large pot and saute garlic, celery, carrots and onions until tender
Add spinach and cook until tender
Add rest of ingredients and simmer. It's that easy!
