S'mores cookies

My sister's friend, Andrea Shehata introduced this recipe to me and knew instantly that I had to share this with our FOX viewers.  This simple and easy take on the s'more, can be taken to a whole new level by creating your own version using your favorite flavor of graham cracker, chocolate chip or candy bar.

You can even have a s'more cookie bar where guests can make them up the way they want.  Simply make the cookie dough up beforehand forming the balls of dough out and placed in a serving bowl, along with cut up candy bars and graham cracker squares.  DO AHEAD: You can make the cookie dough up a few days in advance, keeping it in the refrigerator.  This recipe makes 24 cookies.

You will need:

Graham crackers

Dough (recipe below)

Candy bars

Miniature Marshmallows

Dough:

1/2 c. butter flavored shortening or butter

3/4 c. sugar

1/2 c. brown sugar

1 egg

1/2 tsp. vanilla

1/2 tsp. salt

1/2 tsp. baking soda

1 1/4 c. AP flour

1 c. chocolate chips

Cream butter and sugar together until smooth, then add egg and beat until combined.  Add vanilla, salt and baking soda, mixing again to combine.  Add flour and mix until incorporated, followed by the chocolate chips.  Form into a log and divide into 24 equal pieces then form into a ball.

Preheat oven to 350 degrees.  Put graham cracker squares on a half sheet pan, placing one dough ball on top of each square.  Bake in oven for 13 minutes.  Remove from oven and place 4-6 miniature marshmallows on top of dough, then set a single square of candy bar on it side into the middle of the cookie  Place back in oven and bake for 2-3 more minutes.  Remove, allow to cool slightly - enjoy warm from the oven!
