10-12 pieces of diced watermelon
2 tablespoons olive oil
Squeeze of lemon juice
3-4 slices red onion
2 tablespoons basil puree
3 cherry tomatoes
7-9 arugula leaves
1 ounce goat cheese
1 teaspoon chile oil
Combine watermelon, red onion, olive oil and lemon juice in a bowl. Toss to coat melon.
Spoon basil puree onto a small plate. Drizzle chile oil on the edge of the plate.
Top with watermelon and onion.
Arrange cherry tomatoes, arugula and goat cheese over watermelon.
Finish with sea salt and fresh black pepper.
