Linzer French Toast

This recipe is a take on the traditional, German Linzer cookie which is comprised of two shortbread cookies, sandwiched together with jam.  The top cookie has a cutout, which reveals the delicious jam nestled inside - only here, I used French toast.  This recipe will make 3 sandwiches.

4 eggs
1/2 c. whole milk
1 tbsp. sugar
1 tsp. vanilla
1/4 tsp. almond extract

Whisk ingredients together (I prefer to blend them so it is smooth) - dip pieces of bread into custard and fry for 3-4 minutes on each side.  Remove and allow to cool slightly.  Using a heart shaped cookie cutter, cut out the middle of one of the pieces of French toast, OR cut out a heart shape from a piece of parchment paper - then place on the French toast, and cut around heart with a small, sharp knife.  Remove cut-out heart.

Place uncut piece of French toast on plate, then slather with favorite jam (I used raspberry).  Put second piece of French toast on top.  Cover heart hole using parchment heart, and sprinkle top with powdered sugar.  Serve and enjoy!
