Melt one 12-oz bag of chocolate chips over a double boiler you desire – I use Special Dark since I prefer dark chocolate. Using a small ice cream scoop, place one scoop onto a Silpat mat (I use my perfect cookie Silpat since it has measured circles on it as guides). Spread out the chocolate to form 3″-4″ circle.
Top with desired goodies – for this I used autumnal candies, yet you can use any dried fruit, nuts, toasted quinoa, etc. Place into refrigerator to chill for 30 minutes, then remove and use a spatula to remove the bites – serve and enjoy, or place into a covered container to keep fresh.
