POWER BREAKFAST: Egg casserole cups, triple berry smoothie
Egg Casserole in Muffin Cups
Ingredients
12 slices of bacon cooked and cut into thirds
6 eggs
½ cup shredded jack cheese
½ cup half and half
¼ teaspoon of salt
¼ teaspoon of pepper
¼ teaspoon Italian seasoning
Extra cheese for the top
Directions
1.Spray muffin tin with nonstick cooking spray.
2.Place 3 bacon pieces in the bottom of each muffin cup.
3.In a bowl, mix together all the ingredients except the extra cheese until well blended.
4.Fill each muffin cup with ¼ cup egg mixture.
5.Sprinkle extra cheese on top.
6.Bake for 20 to 25 minutes @350 degrees or until eggs are set.
You can also just make the egg mixture and place in the muffin tins.
Cut up a bunch of different colorful vegetables. Let the kids at the colorful ingredients.
Before you know it your kids are eating their vegetables.
Triple Berry Smoothie
Ingredients
1/2 cup strawberries
1/2 cup blueberries
1/2 cup raspberries
1 banana
1/2 cup yogurt
1 cup milk
1/2 cup ice cubes
Directions
Blend the banana, ice, yogurt, milk, and other berries together until a smooth drink is formed. Pour into a cup and enjoy a very fruity, healthy smoothie.
