D'Amico lamb sliders

Lamb Sliders by D’Amico Catering

1 lb.  cooked lamb sliced thin
3 Tbsp. olive oil
1 cup    onion julienned
1 Tbsp. sliced garlic
1 cup   stock - vegetable, chicken, beef or lamb
12  rolls
1 cup  pickled onion – recipe follows
1 cup  cumin yogurt – recipe follows

• Sauté the onion and the garlic in the olive oil till soft
• Add the lamb and stock
• Bring this up to a boil and reduce the stock by ½
• Place on the rolls and top with the pickled onions and cumin yogurt

Pickled red onions
1 cup  sliced red onions
½ cup   red wine vinegar
¼ cup  water
4 Tbsp. sugar
1 tsp   salt

• Place all ingredients in a sauce pan and bring to a boil
• Place in a non-reactive container and cool over night

Cumin yogurt
1 cup  yogurt
½ Tbsp. cumin
Pinch   cayenne
1Tbs  chopped cilantro
1Tbs  chopped scallions
1Tbs  lemon juice and zest

• Place all ingredients in a bowl and mix together.
•  Salt and pepper to taste.
