Fresh garden salsa

It’s the season for fresh tomatoes, corn and peppers and to celebrate a Cantina Laredo shared a few tips and hints with viewers about how to make their garden-fresh salsas to brighten up your dinner table.

Ingredient list:

·      Roasted Tomatillo Salsa: roasted tomatillo, tomato, red pepper, yellow onion and cilantro
·      Mango Ginger Salsa: red onion, fresh ginger, fresh pineapple, mango, habanero, roasted red bell pepper, jicama, lime juice and cilantro

Basic Pico de Gallo Recipe:

2      cups of diced fresh ripped tomatoes
1/2   cup diced white onion
1/2   cup  diced red onion
        You can use 1 cup of either onion
2 tea spoons of white vinegar
2 table spoons of lime juice
1/2 cup finely chopped cilantro
Kosher Salt to taste

Add tomatoes and onion to a mixing bowl, add a half teaspoon of kosher salt and mix.
Add the vinegar and lime juice, mix again.
If you want to add fruit add it now, a cup of diced fruit total should be enough (pineapple, mango or strawberries)
Add cilantro, mix well and taste. Add more salt if necessary.
