RECIPE: Five pounds of fudge

The holiday season is in full swing and now is the time to treat your sweet tooth. The Cooking Mom, Amy Hanten shares her recipe for the ultimate fudge, which can make a great holiday treat or gift.

Ingredients

3 (12 ounces each) packages semi-sweet chocolate chips
1 (7 ounce) container marshmallow cream or 4 cups mini marshmallows
2 sticks butter, softened
2 tablespoons vanilla extract
2 cups pecans or walnuts, chopped (optional)
4 1/2 cups sugar
1 (12 ounce) can evaporated milk

Directions

Line a 9 x 13 inch baking dish with foil. Spray foil with cooking spray. This makes it easier to remove the fudge and cut it.

Place chocolate chips, marshmallow cream, butter, vanilla, and nuts if using in large bowl. Set aside for later.

Pour sugar and evaporated milk in a large pot. Bring mixture to a boil and boil briskly for 7 minutes stirring continuously. You must stir to keep it from burning! Remove from heat and pour into the bowl containing the chocolate chips mixture. Mix until incorporated completely. Pour into prepared pan and refrigerate until set.

Slice into squares and serve. You can prepare this ahead of time and freeze if desired. This makes a big batch - five pounds of fudge!
