Easy Halloween dinners

BASIC BREAKFAST BOWL

Tricolor quinoa, milk, honey, chopped fresh apples, raisins, ground cinnamon and pumpkin seeds. Bowl of warm cooked grains, I will add milk and toppings.


PULLED PORK NACHOS

Skip green onion and cilantro and add pico de gallo instead. Start with a parchment-covered pan with chips on it, we will add warm pork, black beans, cheese and ranch dressing.


MEXICAN DINNER BOWL

Add all the stuff listed in “Variations,” but do a grilled chicken breast instead of shredded rotisserie. Start with a bowl of the warm cooked rice with spinach wilted in. Add beans, salsa, corn, cheese and chicken.
