Autumn recipe: The Cooking Mom's pumpkin bread

Ingredients:
3 eggs, beaten
2 cups sugar
1 can (15 ounces) pumpkin
2 sticks butter, melted
1 tablespoon vanilla
3 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
2 teaspoons pumpkin pie spice
1 cup chopped walnuts (optional)

Directions:
In a bowl, whisk together the first 5 ingredients. Whisk together dry ingredients in another bowl. Gradually add to dry ingredients to pumpkin mixture. Mix well. Stir in the nuts. Spoon batter into 2 9-inch loaf pans that have been sprayed with cooking spray. Bake in a pre-heated 350 oven for 45 to 55 minutes. Cool about 10 minutes before removing from the pans. Makes 2 loaves.
