RECIPE: Red Cow turkey burger

Red Cow executive chef Trevis Langley prepared their award-winning Turkey Burger, voted "Best Turkey Burger" by Mpls.St. Paul Magazine in 2013.  The restaurant's third location opened last month in the North Loop. Recipe:

Turkey Patty

2 pound ground turkey

1/4 cup finely diced red onion

1 avocado, diced

1/4 cup Great Northern white beans

1 tablespoon Tabasco

1 tablespoon kosher salt

2 teaspoons white pepper

-Form into 6 - 6.5 ounce patties

-place on a 400 degree skillet and cook to 165 degree internal temperature

Cilantro Lime Mayo

2 cups Mayonnaise

1/2 cup sour cream

1/4 cup chopped cilantro

1/2 lime zested and juiced

1 tablespoon minced garlic

1 teaspoon minced shallot

1 teaspoon black pepper

2 teaspoon kosher salt

- place all ingredients in a bowl and mix until incorporated

Other toppings

fresh arugula

chopped pistachios

sliced radish

large burger buns

butter

olive oil

-Butter 6 large burger buns and griddle until golden brown

-place 1 tablespoon of cilantro lime mayo on the bottom of each bun

-top with a turkey burger patty

-toss arugula with a small amount of olive oil

-place arugula on the burger followed by radish then pistachios
