150 pounds lighter, Minneapolis man starts meal prep service

Years ago, Rashard Keen probably never imagined he'd be cooking for more than 100 customers every week. But he did believe that he'd be able to go from 350 pounds in 2013 and down 150 pounds a year later.

“I woke up one day looked in the mirror and just said I need to make a change,” Keen said.

Body building, working out and eating healthy are part of his life, and that's where the kitchen comes in. He and his wife started a company called Empower Meals.  They make "grab and go" dishes that are simple, healthy and without preservatives: clean eating for busy people. They rent space at a kitchen in the Midtown Global Market on Saturdays and they deliver the meals on Sundays.

"We want to be that one-stop shop for people who were in my shoes,” Keen said.
