Game Day Guacamole

Ingredients:

• 6 avocados
• ½ red onion, minced
• 5 cloves garlic, minced
• 1 bunch fresh cilantro, chopped
• ¼ lemon juice, to taste
• ¼ lime juice, to taste
• 1 jalapeño with seeds and membrane removed, minced

Method of Preparation:

1. Using a fork, mash avocados together in a mixing bowl.
2. Stir in all remaining ingredients. Taste for acidity and season with lemon and lime juice accordingly.
3. Reserve an avocado pit in your guacamole to slow oxidation rate.
4. Serve with pita chips or fresh tortilla chips and enjoy!


Bruschetta

Ingredients:

• 4 heirloom tomatoes, chopped
• 4 cloves garlic, minced
• ¼ cup olive oil
• 1 bunch fresh basil, chiffonade
• 1 Meyer lemon, juiced
• Olive oil, salt and pepper, to taste
• 1 baguette, bias-cut
• 1 clove garlic for rubbing baguette

Method of Preparation:

1. Preheat oven to 400°F.
2. Line a sheet tray with foil.
3. Cut baguette into one-inch thick slices.
4. Drizzle baguette with olive oil and season with salt and pepper.
5. Bake bread for eight to ten minutes or until sides are golden brown.
6. Remove from oven and immediately rub garlic cloves on bread.
7. Chop tomatoes and combine with garlic, oil, basil, and lemon in a mixing bowl. Season to taste.
8. Drizzle juice from tomatoes on top of bread, then top with tomato mixture. Serve immediately and enjoy!

Ceviche

Ingredients:

• ½ pound shrimp
• ½ pound sea bass
• 1 bunch cilantro
• 1 jalapeño
• 2 bell peppers (use red, yellow, or orange)
• ½ red onion, chopped
• 1 cup lemon juice
• 1 cup lime juice
• Salt and pepper, to taste

Method of Preparation:

1. Cut shrimp and sea bass into ¼-inch chunks and add them to a glass bowl.
2. Chop cilantro, red onion and bell peppers.
3. Remove jalapeño membrane and seeds, then mince jalapeño.
4. Add all chopped ingredients to bowl with fish and cover with lemon and lime juice. Season generously. Make sure mixture is fully submerged in juices, then refrigerate for at least four hours.
5. Re-season and serve with fresh tortilla chips. Go Vikings!
