RECIPE: Quick chicken pad thai

I love this recipe because it is perfect for a single person, or as many as you want. You can also customize each persons with or without chicken as well as the heat level if desired. The beauty of this dish is it uses simple, inexpensive ramen – only you don't use the seasoning packet, just the noodles. I always have pre-cooked chicken on hand, so if you don't then it will be a little more time consuming for you. I figure roughly 1 c. of cooked chicken per person.

In a medium saucepan add 1.5 c. water and 1 package of ramen noodles – minus the seasoning packet along with 1 tbsp. minced garlic. I break the ramen noodles up before adding, this is not a necessary step. Bring to boil and cook for three minutes.

Remove from the stove and add

2 tbsp. peanut butter, creamy or chunky

1 tbsp. soy sauce

1 tbsp. Sriracha

1 green onion, sliced

1 c. chicken – if desired

OR use 1 c. desired vegetables

Stir ingredients together until mixed well – serve and enjoy!
