Cobb salad dip

This is a riff on one of my favorite things to eat. It’s basically ranch dip on steroids. You can half this recipe if desired for a smaller crowd. For the corn, I saute it in some of the bacon grease after cooking the bacon to give it a bit of color. Served with tortilla chips or pretzel chips is delicious.

16 oz. sour cream
16 oz. cream cheese
1 ranch seasoning packet
1 c. chopped Romaine lettuce
1 c. shredded cheddar cheese
1 c. chopped Roma tomatoes
1/2 avocado, chopped
1 c. corn
1 c. crumbled bacon
1/2 c. crumbled blue cheese

Mix together the sour cream, cream cheese and ranch seasoning until smooth and creamy. Spread on the bottom of a platter. For the toppings, you can either layer them in order listed above OR mix together in a bowl and sprinkle of the top. Serve immediately or chill until an hour before needed, pulling out of the refrigerator so dip can come to room temperature and be easier to spread.
