Summer corn salad with feta

Summer Corn Salad with Feta

8 ears corn, husked and kernels removed
4 tbsp butter
6 tbsp olive oil
4 garlic cloves, minced
2 tbsp thyme
1 bunch of green onions, chopped
1 pt. cherry tomatoes, halved
6 oz feta cheese, cubed or crumbled
4 tbsp fresh basil, chopped
Salt/Pepper to taste

In a large frying pan, heat butter and olive oil. Add garlic and thyme, saute for one minute. Add green onions and corn, saute for 3-4 minutes.  Add tomatoes and cheese, continuing to cook for 2-3 more minutes.  Remove from stove, and add basil.  Season with salt and pepper to taste - serve warm or at room temperature. 

Mexican Street Corn Salad

4 tablespoons unsalted butter
6 ears corn, husked and kernels removed
1 tbsp minced garlic
1 jalapeno, seeded and diced
1/4 c. mayonnaise
4 oz. crumbled cotija cheese
1 tbsp dried cilantro OR 2 tbsp. fresh cilantro
1 tsp. chili powder
Juice of 1 lime

In a large frying pan, heat butter. Add garlic and saute for one minute. Add corn and jalapeno, saute for 3-4 minutes.  Remove from stove, and add mayonnaise, cheese, cilantro, chili powder and lime juice.  Season with salt and pepper to taste - serve warm or at room temperature.
