Recipe: Heirloom tomato tart

This tart really showcases heirloom tomatoes and is such an amazing addition to breakfast, lunch or dinner. For the crust, feel free to make from scratch or use store-bought dough – regardless, you will need to blind bake and cool your dough into a 10″ tart pan, or something similar in size.

Filling

2 c. ricotta cheese
2 c. grated Parmesan cheese
1 1/2 lb. heirloom tomatoes, sliced roughly 1/4″ thick
2 tbsp. chopped fresh basil
1 tbsp. fresh thyme
Sea salt and coarse ground pepper, to taste

Mix ricotta cheese and Parmesan cheese together into a bowl, and spread onto cooled crust. Layer heirloom tomatoes on top, sprinkle with basil, thyme, salt and pepper. Serve and enjoy!
