Post-Thankgiving treats that aren't leftovers

Although Thanksgiving is over, you may find yourself Thanksgiving-mealed out - all the turkey and dressing can become monotonous after a few days, especially if you have house guests for the weekend.  Here are a few, quick and delicious treats to make that are sure to tantalize their taste buds. 

Everything Ham and Cheese Sandwiches

1 package sweet Hawaiian rolls
1 lb. sliced ham
10 slices cheese
1 stick unsalted butter, melted
1 tbsp. Dijon mustard
1 tsp. Everything mix

Slice the rolls in half. Tear off a large piece of aluminum foil and wrap around the bottom so that the sides will come up and close around the large sandwich (this will not be necessary if you are making a double batch as the 9X13 pan will hold it together).

Take half the ham, slice by slice and place in mounds/bunches on top of the bottom half, cover with half the cheese – repeat with second half. Cover with top half of rolls. Fold foil up around sides and fold in corners. Place in 9″ square pan – I put bunches of parchment in the extra side space to hold the sides of the sandwich in place.

Melt butter and add Dijon mustard, mixing with fork. Drizzle over top of rolls, then sprinkle with Everything mix if desired. Cover with plastic wrap and allow to sit for a 2-3 hours, or refrigerate and pull our one hour before baking.

Preheat oven to 350 degrees. Cover pan with foil and bake for 30 minutes – remove foil and bake uncovered for five minutes. Remove from oven and serve.

Bacon Wrapped Pineapple

To cut the pineapple the right size was the key here, so here is my method. Slice the top and bottom off a pineapple, then in half lengthwise. Cut each half in half lengthwise again. Use a knife to cut the core out diagonally. Cut each half in half lengthwise again. Cut each one of those pieces into five or six thick slices, depending on the size of your pineapple. Then use a paring knife to cut the outside edge off.

Wrap each slice in a half slice of bacon, and secure with a toothpick. Place on baking sheet with pineapple side down, bacon side facing to the side. Bake at 350 for 30 minutes, turning half way. Remove from the oven and place on platter – I drizzled mine with Sriracha.
