Recipe: Ahi Poke

Ahi Poke

Makes 4 servings


Ahi Poke 2 oz

Guacamole 4 oz.

Won-ton pi 2 oz.

Sriracha aioli Garnish

Arare Garnish

Microgreens Garnish


1. Compose all ingredients into a ring mold

Ahi Poke

Ahi (Sashimi grade) 8 oz.

Sesame oil 1 tsp

Green Onion 1 oz

White Onion .5 oz

Sambal 1 tsp

Tobiko 1 tsp.

White Soy 1 tsp.

Salt to taste

1. Dice ahi into 1 inch cubes. Place tuna into a bowl, preferably not metal.

2. Salt ahi, then gently incorporate other ingredients.


Avocado 8 oz

Ginger .5 tsp

Garlic .5 tsp

White onion 1 oz

Tomato 1 oz

Cilantro 1 T

Lime juice 1 oz

Sambal 1 T

Sake 1 T

Salad Oil 1 T

1. Dice avocado and place into mixing bowl.

2. Microplane ginger and garlic into the mix. Small dice the tomato and white onion, along with the roughly chopped cilantro and incorporate.

3. Mix remaining and ingredients and season to taste with salt and pepper.
