Greek Chip Dip
On a plate put a generous layer of greek yogurt, a generous layer of hummus, the zest from one lemon evenly distributed on top the hummus, a layer of chopped cilantro, a layer of chopped tomatoes, a thin layer of raw chopped onions and peppers left over from when you chopped up veggies for your chili, add a little feta cheese on top and dip!!!
One LB of extra lean ground turkey (cook before you throw it in the crock pot)
One to two jars of basil and garlic spaghetti sauce
Two cans of tomatoes (depending on how thick you like it)
One can of black beans
Two cups of frozen corn
one red pepper (diced)
one onion (diced)
about a cup of fresh cilantro
1/4 cup chili powder
1 tbls cumin
1 tbls garlic
1 teaspoon sea salt
1 teaspoon black pepper
Some people don't think this recipe is spicy enough, and some think it's too spicy. Because you will cook the turkey before you throw it in the crock pot you can taste test as you add spices so it's just right for you.
Just keep in mind that as soup cooks and sits it will get a little more spicy or more flavorful.
Clean caramel popcorn
Preheat your oven to 250 and set out two large cookie sheets - I like to put parchment paper on my cookie sheets for this recipe.
Air pop a large bowl of popcorn. I make my own microwave popcorn by taking a brown paper bag and putting a little over a 1/4 cup of popcorn seeds in it and putting in in the microwave on the popcorn setting. You'll have you're own inexpensive version of microwave popcorn!
liquefy a 1/4 cup coconut oil
in the liquefied oil add 6 TBL's pure maple syrup
a tiny bit of vanilla extract
and 1/2 tsp of sea salt or Himalayan sea salt
To help evenly distribute the mixture you can put half of the plain popcorn on your cookie sheets while you mix half of your mixture on the first half of the popcorn. Dump in the second half of the popcorn and add the rest of the popcorn on top, mix again.
put all of the carmel corn on your prepared cookie sheets and put in the oven for an hour. Turn the popcorn every 15 mins to evenly distribute the caramel. I would say that you can store this in an air tight bag, but it will probably be eaten in about 10 mins so don't even bother.
1 small red onion finely chopped
1 mango chopped
1 lime for to juice on top
3 TBLS chopped fresh cilantro
1 Tbls seat salt
1/2 TBL minced garlic
Frozen Greek yogurt bites
You'll need a cookie sheet with waxed or parchment paper covering the cookie sheet to lay the mixture on and put in the freezer (make space in your freezer)
1/2 cup greek yogurt
2 Tsp Cinnamon
1/4 cup frozen blueberries
1.5 TBLS honey
Mix everything together, spread on thin layer on top of the parchment. Put the cookie sheet wight he mixture on it in the freezer until it's frozen through. Break into pieces and share!
